The Fremantle Biennale is thrilled to announce the return of Fervor as part of the 2019 program and to have secured the venue: The brand new Republic of Fremantle – a new distillery opening its doors early next year. This iconic building has been reimagined by local entrepreneurs Jason Townes, John McVeigh and Matt Giudice with the architectural genius that is Michael Patroni’s Spaceagency Architects
Expect a truly unique Australian dining experience. Using locally sourced native produce to inspire and fashion their menus, Fervor engage with local communities to share in a cuisine drawn from the immediate landscape with deep connections to story and place.

Paul Iskov has worked internationally at world leading restaurants Noma, DOM and Pujol. Since then, he has returned to Western Australia to craft a unique outlook on contemporary Australian cuisine.
